A traditional country style dish with tender pieces of venison marinated in red wine and cooked in a rich dark
cranberry and redcurrant sauce spiked with juniper berries. Garnished with button onions, ham and mushrooms.

LIVER & BACON CASSEROLE
Tender thin slices of lambs liver braised with onions and herbs, and topped with back bacon.
Ideal served on a bed of mashed potato.

GOURMET SAUSAGES IN BEER, ONION AND THYME
Three large traditional Cumberland sausages in a rich dark beer,
onion and thyme sauce.

ITALIAN MEATBALLS AND PASTA
A coarse style Italian meatball of pork and beef, onions, chopped pimentos and oregano,on a bed
of penne pasta and smothered in a chunky tomato, onion and herb sauce.

DUCK IN ORANGE, GINGER & LIME SAUCE
A whole cooked and sliced skin on duck breast in tangy orange sauce flavoured with
ginger and lime garnished with fresh orange segments and zest.
For a crispy finish remove duck breast from sauce and
lightly grill until golden brown.

CHICKEN & SEAFOOD PAELLA
Surley the most famous Spanish dish and a complete meal in itself. A classic selection of chorizo,
chicken drumstick, mussels, prawns and squid rings with rice, peas, red peppers and spices.
