A traditional country style dish with tender pieces of venison
marinated in red wine and cooked in a rich dark
cranberry and redcurrant sauce spiked with juniper berries. Garnished with
button onions, ham and mushrooms.
LIVER & BACON CASSEROLE
Tender thin slices of lambs liver braised with onions and
herbs, and topped with back bacon.
Ideal served on a bed of mashed potato.

A whole cooked and sliced skin on duck breast in tangy orange sauce
flavoured with
ginger and lime garnished with fresh orange segments and zest.
For a crispy finish
remove duck breast from sauce and
lightly grill until golden brown.
